The vintner's annotations
Wine has intensive color of ripe black cherry, with a purple reflection and nuances of onion leaves on the edge. Flavorings are deep and multilayer, made of notes of red fruits, intrigue spice tones and suffusion of vanilla and coconut. Taste is rounded, full and soft, with vibrant refreshing wave of fruit acids that are melting into long- lasting ending. The ending of the taste brings us back to the beginning- all aromas are melting into a perfect circle of freshness and sweetness.
Food
Smoked meat and flitch, all kinds of red meat (especially with forest mushrooms), steak tartar, beef and lamb meat, venison, roasted turkey and duck, quail, partridge, pheasant; grilled poultry meat, chicken liver with bacon, semi-soft cheese (edam, swiss cheese, appenzeller, kashkaval etc.).
Serving
Serve at a temperature between 16 and 20 ºC in glasses for full and mature red wine with the larger body and the narrowed opening that will allow the full experience of complex flavors). If it's possible-open 30 to 60 minutes before serving, otherwise – decant for aeration to release the aromas faster.
Note: it is required to decant for aeration; after five years of aging, decant to separate grouts.
